French oak chips – light toasted and medium size M
The oak chips is made from new, cooperage grade oak. The species are Quercus sessiliflora or Quercus robur for French oak. The oak meets the cooperage quality standards and contains no bark, nor sapwood. Before processing, the wood is naturally seasoned in the open air for a minimum of 18 months.
Physical characteristics
Oak chips are sold toasted. They do not undergo any chemical, enzymatic or physical treatment other than heating.
Technological and organoleptic effect of light toasted oak chips in wine is expressed in the stabilization of anthocyanins and color, improves the sense of volume, softness and sweetness.

- Length – 10 ÷ 12 mm
- Width – 5 ÷ 8 mm
- Thickness – 2 ÷ 5 mm
Moisture of toasted products – between 2% and 4%
Usual dosage rate
Optimal dose ranges from 1 to 5 g / liter, depending on the desired sensory and technological effect.
Recommendations
Oak particles can be used in two main technological steps - during the fermentation and during wine aging. Duration of contact can range from 1 to 4 weeks depending on the combination of all factors affecting the extraction process.
